Black Bean Hummus
1 clove of garlic
1 (16oz) can black beans, drained (reserve liquid)
2 tbs fresh lemon juice
1-2 tbs tahini
1 tsp ground cumin
1/2 tsp salt
1/4 tsp cayenne
Crush the garlic and place in food processor. Add black beans, lemon juice, tahini, cumin, salt and cayenne. Process until smooth. Add enough of the reserved liquid (1 tablespoon at a time) from the beans to reach desired consistency, pulsing after each addition.
The hummus I took and made veggie wraps using bib lettuce. Spread this goodness in the lettuce and filled it with my favorite sliced veggies.
