We use a rice cooker, because it’s mindless and I don’t need to watch it. But you can cook stove top as well.
2 cups jasmine brown rice (we find ours at Trader Joe’s)
1 cup coconut milk
2 cups water
3 tbl unsweetened coconut
Rinse rice. Add rice, coconut milk and water to rice cooker or stove top. If on the stove top bring to a boil, then let simmer until all liquid is absorbed. Press “cook” on rice cooker 😉
Heat oven to 350. Place unsweetened coconut on cookie sheet. Cook coconut just until the coconut becomes golden. Watch it! It burns quick.
Once liquid is absorbed and rice is tender, fluff with a fork and fold in toasted coconut. Enjoy!
