1 8 oz can pineapple juice
1/2 c soy sauce
2 tbl crushed red peppers
2 tbl coconut oil
1 package of trader joes mixed stir fry vegetables
Salt to taste
Marinate the tofu in a bowl with juice, soy sauce and red peppers, cover with plastic wrap. Let sit in the fridge for 5 hours, or overnight.
Cut marinated tofu in to small squares. Add coconut oil to large skillet, heat and add tofu. Cook tofu dr five minutes and add veggies and 1/2 cup of the tofu marinade. Cook until vegetables are cooked through. Serve over quinoa or brown rice.
