1/2 c COOKED quinoa
1 medium sweet potato, peeled and cooked
1 Chia Seed Egg (1tbl chia seed, 3 tbl water, stir together and let sit 15 min)
2 cans of black beans, drained and washed
1/2 c chopped onion
1 1/2 c whole wheat flour (start with 1 cup and add more to gain correct consistency)
1 tbl cumin
1 tbl garlic powder
1/2 tbl chili powder
Mix all ingredients together, mashing up the beans and sweet potato. The mixture should make a dough that is easily molded. Mold mixture to the shape of a golf ball and flatten. Coat a frying pan with coconut oil. Cook each “burger” on the stove top for 3-4 minutes each side on medium heat.
Top with onion, tomato and mustard. (We like to caramelize our onions first 🙂 )
Serve by themselves or wrapped in lettuce.
