2 c washed spinach
1/4 c chopped dates
1/4 c dried cranberries
1/4 c chopped pecans
A few pieces of sliced red onion
2 tbl olive oil
1 tbl white wine vinegar
Mix oil and vinegar and set aside. Toss all remaining ingredients together.
Add vinaigrette when ready to eat.
